This Apple & Pecan Spring Mix Salad is perfect for a light meal or side salad. It combines the flavor of sweet, crisp apple with nutty pecans and earthy spring mix lettuce. This Paleo salad contains a nutritious dose of fat and would pair well with pan seared salmon, curry crusted chicken or even a bun-less burger for a full meal.
Apple & Pecan Spring Mix Salad
- 2-3 Cups organic spring mix lettuce
- 1/4 Cup chopped Fuji apple
- 1/4 Cup raw pecans
- 1/2 small avocado
- red onion, sliced
- honey mustard dressing
- Place lettuce on a large plate or bowl.
- Add toppings: apple, pecans, avocado* and onion.
- Drizzle salad with dressing and serve.

This healthy salad recipe serves one, but can easily be multiplied to serve more. To change up the flavors you may swap the Fuji apple for other apple varieties, use other nuts in place of the pecans and add a more mild onion like white or sweet onion varieties.
