Almond Date Balls (Paleo, Vegan)

Description

These almond date balls have a chewy caramel-like filling that's coated in dark chocolate. They're paleo and vegan friendly.

Instructions

  1. Place the almonds, pitted dates and salt in a food processor.
  2. Blend, stopping every so often to scrape down the sides, until the mixture forms a ball of dough in the food processor.  It will have a thick, sticky, caramel-like texture.  This process takes about 3-5 minutes.
  3. Roll the mixture into balls, each about 1 tablespoon in size and place on a lined baking sheet.
  4. Optional for chocolate coating: Place the balls in the freezer and freeze for at least 30 minutes.
  5. Melt the dark chocolate in a small dish, then dip the balls into the chocolate and place back on the lined baking sheet to set.  You can drizzle remaining chocolate over the balls for decoration.
  6. Store in an airtight container or baggie in the fridge or freezer.
