Chocolate Cassava Pancakes

Easy to make chocolate pancakes that are Paleo, Vegan and free of all common allergens.


  • 1/3 cup cassava flour, lightly packed
  • 1/3 cup cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp pink salt
  • 2 eggs OR 2 flax eggs*
  • 3 Tbsp maple syrup
  • 1 Tbsp coconut oil (room temp) + more for cooking
  • 1 tsp vanilla extract
  • 1/4 cup warm water**


  1. In medium-sized bowl, combine all dry ingredients.
  2. Add in wet ingredients.  Mix well, then let batter sit for 5-10 minutes to thicken.
  3. Melt a bit of coconut oil (about 1/2 tsp) to preheated frying pan.
  4. Add 1/4 cup batter to pan, cover and cook on medium-low heat until nearly cooked through.
  5. Flip pancake and cook about a minute more.
  6. Remove pancake from pan and repeat until no more batter remains.


*This recipe works with eggs OR flax eggs.  2 flax eggs = 2 Tbsp ground flax + 6 Tbsp water.  (Photos are from a batch made with flax eggs.)

**Make sure water is warm so that coconut oil will melt in batter.
