Chocolate Chip Applesauce Cookies (No Sugar)

Description

These healthy chocolate chip applesauce cookies are great for a low sugar dessert or easy breakfast side. They're paleo, gluten free, dairy free and only sweetened with applesauce.


Ingredients

Scale
  • 1/2 cup unsweetened applesauce
  • 1/2 cup unsweetened almond butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 Tbsp coconut flour (22g)
  • 2 Tbsp ground flax*
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon (optional)
  • 1/4 tsp salt
  • 1/4 cup dark chocolate chips, chopped

Instructions

  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
  2. In a medium-size mixing bowl, combine applesauce, almond butter, egg and vanilla.  Whisk until smooth.
  3. Add in coconut flour, ground flax, cinnamon, baking soda and salt.  Combine until well mixed.
  4. Fold chocolate chips into the batter.
  5. Let the batter sit for 5 minutes to thicken.
  6. Use a large cookie scoop to scoop the batter onto the lined baking sheet. Each cookie should be about 2 tablespoons in size, making 11 cookies.
  7. Place the cookies in the oven and bake at 350 degrees F for 10-11 minutes.
  8. Remove from oven, cool slightly on the baking sheet, then transfer to a wire cooling rack.

*I grind whole flax seeds in a coffee grinder to make my own ground flax
