Description
These healthy chocolate chip applesauce cookies are great for a low sugar dessert or easy breakfast side. They're paleo, gluten free, dairy free and only sweetened with applesauce.
Ingredients

- 1/2 cup unsweetened applesauce
- 1/2 cup unsweetened almond butter
- 1 large egg
- 1 tsp vanilla extract
- 3 Tbsp coconut flour (22g)
- 2 Tbsp ground flax*
- 1/2 tsp baking soda
- 1/2 tsp cinnamon (optional)
- 1/4 tsp salt
- 1/4 cup dark chocolate chips, chopped
Instructions
- Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
- In a medium-size mixing bowl, combine applesauce, almond butter, egg and vanilla. Whisk until smooth.
- Add in coconut flour, ground flax, cinnamon, baking soda and salt. Combine until well mixed.
- Fold chocolate chips into the batter.
- Let the batter sit for 5 minutes to thicken.
- Use a large cookie scoop to scoop the batter onto the lined baking sheet. Each cookie should be about 2 tablespoons in size, making 11 cookies.
- Place the cookies in the oven and bake at 350 degrees F for 10-11 minutes.
- Remove from oven, cool slightly on the baking sheet, then transfer to a wire cooling rack.

*I grind whole flax seeds in a coffee grinder to make my own ground flax
