Description

These healthy chocolate chip cut out cookies are made with almond flour and loaded with mini chocolate chips.  These cookies are crisp, crunchy and delicious!

Instructions

  1. First, preheat your oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
  2. In a large mixing bowl, combine the almond flour, tapioca starch and salt.
  3. Mix in the maple syrup, shortening and vanilla. (I recommend mixing first with a fork or spatula, then using your hands to knead the dough.)
  4. Fold the chocolate chips into the batter.
  5. Grab two sheets of parchment paper and roll the dough between them using a rolling pin. Roll as thin as the mini chocolate chips will allow.
  6. Cut out shapes using a cookie cutter.
  7. Place the cookies on your lined baking sheet and place in the oven. Bake at 350 degrees F for 10-12 minutes.
  8. After baking, cool for 5 minutes on the baking sheet, then transfer to a wire cooling rack.


Notes

The number of cookies this recipe makes will vary depending on the size of the cookie cutter you use.  I made 22 cookies using a circular cookie cutter with a 2 1/4 inch diameter.
