Description

These are the ultimate crispy, chewy chocolate Paleo cookies.  Made with collagen, nut free, dairy free, grain free and absolutely delicious. 


Ingredients

Scale
  • 1/2 cup sunflower seed butter (salted)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup collagen*
  • 1/4 cup coconut sugar (monk fruit for keto)
  • 3 Tbsp cocoa powder
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 1/4 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a medium-sized mixing bowl, combine sunflower seed butter, egg and vanilla.
  3. Add in remaining ingredients, except chocolate chips.  Mix well.
  4. Fold chocolate chips into the dough**
  5. Scoop dough onto baking sheet (about 1 Tbsp dough per cookie).
  6. Bake in the oven at 350 degrees for 12-14 minutes.
  7. Remove from oven, cool a couple minutes, then transfer to wire cooling rack.

Notes

**Dough is quite oily - but it works!
