Healthy Cinnamon Sugar Protein Donuts (Paleo)

Description

These healthy cinnamon sugar protein donuts are made with almond flour and topped with cinnamon and sugar.  They're paleo, gluten free, dairy free and yeast free.

Donuts

  • 1 cup blanched almond flour (95g) spooned & leveled
  • 1/3 cup protein powder (27g)* spooned & leveled
  • 1/4 cup tapioca starch (30g)
  • 1/4 cup coconut sugar
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup plain yogurt (I used coconut yogurt)
  • 1 tsp vanilla extract

Instructions

  1. First, preheat your oven to 350 degrees F.  Generously grease 7 slots of a donut pan. (I used avocado oil.)
  2. In a large mixing bowl, combine the dry donut ingredients.  This includes the almond flour, protein powder, tapioca starch, coconut sugar, cinnamon, baking soda and salt.
  3. Mix in the wet ingredients (eggs, yogurt and vanilla) and whisk the batter until it has a smooth, even consistency.
  4. Pour the batter into your greased donut pan, filling each slot just below the rim.
  5. Place the donuts in your oven and bake at 350 degrees for 15-20 minutes.
  6. After baking, let the donuts cool in the mold for 10 minutes before removing. Then transfer them to a wire cooling rack. Cool to room temperature.
  7. In a small bowl, slightly larger than the donuts, combine the cinnamon and sugar for the topping.
  8. Brush the tops of the donuts with avocado oil, then dip them in the cinnamon sugar topping.

Notes

*I used hemp protein powder for these donuts, but have also made them with pumpkin seed protein powder.  Both work great!
