Description

These homemade ice cream sandwiches consist of a creamy vanilla ice cream, sandwiched between two fudgy chocolate cookies.  This ice cream sandwich recipe is gluten free, dairy free, paleo and vegan friendly.

Instructions

  1. Make the cookie dough.  In a large mixing bowl, combine the almond flour, tapioca starch, cocoa powder and salt.  Add in the palm shortening, maple syrup and vanilla.  First mix with a spatula, then use your hands to knead the dough until it is well combined.
  2. Split the dough into two equal halves.
  3. Line an 8" x 8" baking dish with parchment paper and press one half of the cookie dough into the pan, creating an even, level layer.
  4. Remove that square cookie, along with the parchment paper, to a small baking sheet or large plate.
  5. Line the 8" baking dish with another sheet of parchment paper and press the remaining half of the cookie dough into the dish.
  6. Place both cookie layers in the freezer (keeping one in the baking dish and one on the baking sheet/plate).  Freeze for at least 30 minutes.
  7. If using homemade ice cream, make the ice cream following the recipe's instructions.  I used my paleo vanilla ice cream recipe*
  8. Once the cookies are frozen and the ice cream is ready (creamy and easy to spread), remove the cookies from the freezer.
  9. Scoop the ice cream onto the cookie in the lined baking dish.  Spread the ice cream out in an even layer to the sides of the pan.  Remove the other cookie from the parchment paper and place it on top of the ice cream, lightly pressing it down.
  10. Place the ice cream sandwiches in the freezer overnight, or for at least 6 hours.
  11. Once frozen, remove the sandwiches from the baking dish and cut them to desired size.  I cut mine into 8 large ice cream sandwiches.
  12. Store the bars in the freezer and eat within one month.

Notes

*I only used 2 cups of my paleo vanilla ice cream for these ice cream sandwiches. You can use more or less, depending on how thick you want the ice cream layer to be.
