Healthy Butternut Squash Waffles (No Flour)

Description

These healthy butternut squash waffles are made with just 5 ingredients - all gluten free, dairy free and paleo friendly.  They're crisp and crunchy and can be enjoyed with sweet or savory toppings.


Ingredients

  • 1/2 cup pureed butternut squash (126g)
  • 2 large eggs
  • 1/4 cup tapioca starch (30g)
  • 1/4 tsp salt
  • 1/8 tsp baking soda


Instructions

  1. Place a wire cooling rack in your oven and preheat your oven to 350 degrees F.
  2. Plug in your waffle iron to preheat.
  3. In a medium-sized bowl, combine the butternut squash and eggs.
  4. Whisk in the tapioca starch, salt and baking soda.
  5. Pour the batter onto your waffle iron (just under 1/4 cup if using a mini waffle iron) and cook for a few minutes, or until done.
  6. Place the waffle in your preheated oven (on the wire rack) and cook at 350 degrees for about 10 minutes to crisp.
  7. Repeat steps 5-6 until no more batter remains.
