Description

These healthy cereal granola bars are Paleo friendly, nut free and no bake.  They're great for snacking, prepping ahead for breakfast and packing in school lunches.

Instructions

  1. Line an 8" x 8" pan with foil.  Set aside.
  2. In a large bowl, combine cereal, coconut and pumpkin seeds.
  3. In a small saucepan, melt cacao butter (or melt in a small bowl in the microwave).  Once fully melted, stir in sunflower seed butter, honey and vanilla extract.
  4. Mix in collagen.
  5. Pour the wet mixture over the cereal and mix with a spatula until the cereal is well coated.
  6. Pour the cereal into the lined baking dish.  Using a piece of parchment paper, firmly press down the cereal with your hands.
  7. Place the bars in the fridge or freezer to set.  (About 30 minutes.)
  8. Remove bars from the pan and cut into 12 even pieces.
  9. Bars stay solid at room temperature, but are best stored in the fridge.
