Healthy Dark Chocolate Almond Cookies (Gluten Free, Vegan)

Description

These healthy dark chocolate almond cookies are made with almond flour and sweetened with maple syrup.  They're loaded with chunks of dark chocolate and chopped almonds.

  1. Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
  2. In a large mixing bowl, combine the almond butter, maple syrup, coconut oil and vanilla. Mix in the almond flour, cocoa powder, baking soda and salt. And lastly, fold the chocolate chips and chopped almonds into the dough.
  3. Using a small cookie scoop, scoop the cookie dough onto the lined baking sheet. Each cookie should be about one rounded tablespoon in size, making 14 cookies*
  4. Place the cookies in your preheated oven and bake at 350 degrees for 12 minutes.
  5. After baking, remove the cookies from the oven and let them cool for at least 10 minutes on the baking sheet before transferring them to a wire cooling rack. If desired, top each cookie with a pinch of flaked sea salt.

Notes

*You don't need to leave much space between the cookies, as they spread just a smidge. If you prefer them to be flat, rather than rounded, then press the cookies down with a spatula to flatten before baking.
