Description
These healthy strawberry popsicles are made with yogurt, frozen fruit and hidden veggies (beets). This recipe is gluten free, dairy free, paleo and vegan.
Ingredients

- 10 oz frozen strawberries (about 2 heaping cups)
- 10 oz frozen pineapple (about 2 heaping cups)
- 3 small cooked beets, cubed (170g)
- 1/2 cup coconut yogurt
- 1/3 cup coconut milk
- 1 Tbsp lime juice
- 1 Tbsp raw honey (optional, maple syrup for vegan)
- pinch of salt
Instructions
- Place all popsicle ingredients in a high powered blender. Blend, using the tamper as needed, until the mixture is smooth and consistent.
- Pour the mixture into a silicone popsicle mold.
- Place the top cover on the popsicle mold and then insert a popsicle stick into each slot.
- Put the popsicles in the freezer for at least 8 hours to set.
- Once set, remove popsicles from the mold and enjoy!
