Description

These healthy strawberry popsicles are made with yogurt, frozen fruit and hidden veggies (beets).  This recipe is gluten free, dairy free, paleo and vegan.


Ingredients

Scale
  • 10 oz frozen strawberries (about 2 heaping cups)
  • 10 oz frozen pineapple (about 2 heaping cups)
  • 3 small cooked beets, cubed (170g)
  • 1/2 cup coconut yogurt
  • 1/3 cup coconut milk
  • 1 Tbsp lime juice
  • 1 Tbsp raw honey (optional, maple syrup for vegan)
  • pinch of salt

Instructions

  1. Place all popsicle ingredients in a high powered blender. Blend, using the tamper as needed, until the mixture is smooth and consistent.
  2. Pour the mixture into a silicone popsicle mold.
  3. Place the top cover on the popsicle mold and then insert a popsicle stick into each slot.

  4. Put the popsicles in the freezer for at least 8 hours to set.
  5. Once set, remove popsicles from the mold and enjoy!
