Description
Paleo macadamia nut cookies made with almond butter and almond flour and loaded with chopped macadamia nuts and dark chocolate.

- 1/3 cup almond butter
- 1/3 cup palm shortening (or butter)
- 1/2 cup coconut sugar
- 1 large egg
- 1 tsp vanilla extract
- 3/4 cup blanched almond flour (66g)
- 1/4 cup tapioca starch (30g)
- 1/2 tsp baking soda
- 1/2 cup salted macadamia nuts, chopped
- 1/3 cup miniature dark chocolate chips
- flaked salt (optional topping)
Instructions
- Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the almond butter, shortening, coconut sugar, egg and vanilla. Whisk with a fork until well combined.
- Add in the almond flour, tapioca starch and baking soda. Mix until well combined.
- Using a spatula, fold the macadamia nuts and chocolate into the dough.
- Use a large cookie scoop to scoop the dough onto your lined baking sheet. leave 1-2 inches between each cookie so they have room to spread. You should get about 13 cookies.
- Place the cookies in your oven and bake at 350 degrees F for 10-12 minutes.
- After baking, remove the cookies from the oven and top each with a pinch of flaked sea salt. Let the cookies cool for 5-10 minutes on the baking sheet before transferring them to a wire cooling rack.
