Description
These pistachio date balls have a chewy date and pistachio filling that's coated in dark chocolate. They're just 5 ingredients - all paleo, vegan and gluten free.

- 1 cup pitted Medjool dates (about 11)
- 1/2 cup shelled pistachios (roasted and salted)
- 1/2 tsp vanilla extract
Coating
- 1/2 cup dark chocolate chips
- 1 tsp coconut oil
Instructions
- Soak the dates in hot water. To do this, place the dates in a small bowl and heat a pot of water. Once hot, pour the water over the dates, fully submerging them. Let the dates sit for 5 minutes, then drain the water.
- Place the dates, pistachios and vanilla in your food processor.
- Blend, stopping every so often to scrape down the sides, until the mixture forms a sticky ball in the food processor.
- Roll the mixture into balls, each about 1 tablespoon in size. (The mixture is sticky!) Place them on a parchment-lined baking sheet or plate and put the balls in the freezer for an least one hour.
- When the balls are ready to dip, melt the dark chocolate and coconut oil. Place the chocolate and coconut oil in a microwavable dish and microwave on high at 20-30 second intervals, mixing between heating.
- Grab the balls from the freezer. One at a time, dip them into the melted chocolate then place them back on the lined baking sheet to set.
- Optional: drizzle any remaining chocolate over the balls and top with a pinch of flaked sea salt.
