Description

These pistachio date balls have a chewy date and pistachio filling that's coated in dark chocolate.  They're just 5 ingredients - all paleo, vegan and gluten free.

Filling

  • 1 cup pitted Medjool dates (about 11)
  • 1/2 cup shelled pistachios (roasted and salted)
  • 1/2 tsp vanilla extract

Coating

  • 1/2 cup dark chocolate chips
  • 1 tsp coconut oil


Instructions

  1. Soak the dates in hot water.  To do this, place the dates in a small bowl and heat a pot of water.  Once hot, pour the water over the dates, fully submerging them.  Let the dates sit for 5 minutes, then drain the water.
  2. Place the dates, pistachios and vanilla in your food processor.
  3. Blend, stopping every so often to scrape down the sides, until the mixture forms a sticky ball in the food processor.
  4. Roll the mixture into balls, each about 1 tablespoon in size.  (The mixture is sticky!) Place them on a parchment-lined baking sheet or plate and put the balls in the freezer for an least one hour.
  5. When the balls are ready to dip, melt the dark chocolate and coconut oil.  Place the chocolate and coconut oil in a microwavable dish and microwave on high at 20-30 second intervals, mixing between heating.
  6. Grab the balls from the freezer.  One at a time, dip them into the melted chocolate then place them back on the lined baking sheet to set.
  7. Optional: drizzle any remaining chocolate over the balls and top with a pinch of flaked sea salt.
