Description

This healthy bone broth protein banana bread is made with bone broth protein powder and almond flour.  It's a moist, tender and delicious paleo banana bread with a boost in protein.


Ingredients

  • 1 cup mashed banana (245g)
  • 3 large eggs
  • 1/2 cup yogurt (I used unsweetened coconut yogurt)
  • 1 tsp vanilla extract
  • 2 cups almond flour (190g)
  • 1/3 cup tapioca starch (42g)
  • 1/3 cup bone broth protein powder (30g)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350 degrees F.  Line an 8"x4" loaf pan with parchment paper and set aside.
  2. Peel and mash bananas in a large mixing bowl.
  3. Whisk in the eggs, yogurt and vanilla.
  4. Add in the almond flour, tapioca starch, bone broth protein, baking powder, baking soda and salt.  Whisk until smooth.
  5. Pour the batter into your lined loaf pan.
  6. Place the loaf in the oven and bake at 350 degrees for 50-55 minutes.
  7. Remove the loaf from the oven, cool 10 minutes in the loaf pan, then transfer to a wire cooling rack.
  8. Once cooled to room temperature, cut into 10 equally sized pieces (or desired size).
  9. Best stored in airtight container in the fridge.

Notes

*I have not tried substituting with any other protein powder, but the results should be similar if you use the same grams of protein.  Cooking time may vary if you use another type of protein powder.
