Protein Banana Muffins

These Paleo protein muffins are sweetened with banana, perfect for meal prep and a satisfying between-meal snack.


  • 1 large, ripe banana (120g)
  • 2 large eggs
  • 1/4 cup egg whites
  • 1/2 cup almond milk
  • 1 tsp vanilla extract
  • 1/2 cup Nuzest Vanilla Protein Powder (52g)*
  • 1/2 cup blanched almond flour (50g)
  • 4 Tbsp tapioca flour (28g)
  • 2 Tbsp coconut flour (16g)
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/8 tsp salt


  1. Preheat oven to 350 degrees F.
  2. Peel banana and mash in a large mixing bowl.
  3. Add in eggs, egg whites, almond milk and vanilla.  Whisk until well combined.
  4. Add in protein powder, almond flour, tapioca flour, coconut flour, baking powder, cinnamon and salt.  Whisk until well combined.
  5. Pour batter into a lined muffin pan and bake at 350 degrees for 20-25 minutes or until done.
