Description
These Savory Sweet Potato Waffles are Paleo, nut free and easy to make. They're a great way to use leftover sweet potato.
Ingredients

- 1/2 cup mashed sweet potato, skin removed (118g)*
- 1/4 cup Bare Bones Beef Bone Broth
- 1 large egg
- 2 Tbsp avocado oil
- 1/4 cup tapioca flour
- 1 tsp fresh thyme (optional)
- 1/4 tsp salt
Instructions
- In a medium-sized mixing bowl, combine mashed sweet potato, bone broth, egg and avocado oil. Mix well.
- Add in remaining ingredients and mix well.
- Pour about 1/4 cup batter on a preheated, mini waffle iron. Cook until done.
- Optional: place cooked waffles in the oven at 250 degrees F to keep crisp (and warm).
Notes
*I recommend white or Japanese sweet potatoes. Prior to mashing, wash and chop the sweet potato, then steam in a steamer pot until tender. Cool the potatoes to room temperature, then remove the skin and mash with a fork or potato masher.
