Walnut Date Balls (Paleo, Vegan)

Description

These healthy walnut date balls require just 3 ingredients.  They have a soft, chewy texture and rich chocolate coating.


Ingredients

Filling

  • 1 cup pitted dates (about 11 Medjool dates)
  • 1 cup raw walnuts
  • 1 tsp vanilla extract (optional)
  • 1/2 tsp cinnamon (optional)

Instructions

  1. Place the dates in a small bowl.  Pour hot water over the dates so that they are fully submerged. Soak for 5 minutes, then drain the water. 
  2. Add the dates, walnuts, vanilla and cinnamon to your food processor.  Blend, stopping as needed to scrape down the sides until the mixture forms a sticky, cohesive dough.
  3. Roll the filling into balls, each about 1 tablespoon in size. 
  4. Place the balls on a lined baking sheet or plate and freeze them for at least 30 minutes.
  5. Once the fillings have hardened, melt the dark chocolate.  Place the dark chocolate in a microwaveable dish and melt in the microwave (on high) at 20-30 second intervals, stirring between.
  6. Grab the fillings from the freezer and dip them, one at a time, into the melted chocolate.  Place them back on your lined baking sheet to set.
  7. Optional: drizzle any remaining chocolate over the balls and top with a pinch of flaked salt.

Notes

If your dark chocolate is really thick, you can mix in 1/2 - 1 teaspoon of coconut oil to thin it.
