Description
These healthy walnut date balls require just 3 ingredients. They have a soft, chewy texture and rich chocolate coating.

Filling
- 1 cup pitted dates (about 11 Medjool dates)
- 1 cup raw walnuts
- 1 tsp vanilla extract (optional)
- 1/2 tsp cinnamon (optional)
Coating
- 3/4 cup dark chocolate
Topping (optional)
Instructions
- Place the dates in a small bowl. Pour hot water over the dates so that they are fully submerged. Soak for 5 minutes, then drain the water.
- Add the dates, walnuts, vanilla and cinnamon to your food processor. Blend, stopping as needed to scrape down the sides until the mixture forms a sticky, cohesive dough.
- Roll the filling into balls, each about 1 tablespoon in size.
- Place the balls on a lined baking sheet or plate and freeze them for at least 30 minutes.
- Once the fillings have hardened, melt the dark chocolate. Place the dark chocolate in a microwaveable dish and melt in the microwave (on high) at 20-30 second intervals, stirring between.
- Grab the fillings from the freezer and dip them, one at a time, into the melted chocolate. Place them back on your lined baking sheet to set.
- Optional: drizzle any remaining chocolate over the balls and top with a pinch of flaked salt.
Notes
If your dark chocolate is really thick, you can mix in 1/2 - 1 teaspoon of coconut oil to thin it.
