Description
Allergy friendly gingerbread waffles that are Paleo, Vegan and lightly sweetened. Perfect for a holiday breakfast.
Ingredients

- 1/2 cup cassava flour (80 g)
- 1/2 cup tigernut flour (56 g)
- 2 tsp baking powder
- 1/2 tsp ground ginger
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/8 tsp nutmeg
- 2 Tbsp avocado oil
- 1 Tbsp maple syrup
- 1 Tbsp molasses
- 1/2 cup + 2 Tbsp warm water
Instructions
- In a medium-sized mixing bowl, combine all dry ingredients.
- Add in all wet ingredients, mix well.
- Let batter sit for 5 minutes.
- Scoop 2 heaping tablespoons batter onto a preheated mini waffle iron.
- Bake until done.
- Remove waffle from iron, top with your favorite toppings and eat!
