Paleo Almond Flour Crepes

Healthy Paleo and Keto friendly crepes made with almond flour.


  • 4 large eggs
  • 6 Tbsp water (or plant based milk)
  • 1 Tbsp maple syrup (or sweetener)
  • 1 tsp vanilla extract
  • 2/3 cups blanched almond flour (72g)*
  • 2 tsp cinnamon (optional)
  • oil for cooking


  1. Whisk together eggs, water, maple syrup and vanilla in medium-sized mixing bowl.
  2. Add in almond flour and cinnamon, whisk.
  3. Preheat frying pan on medium heat and add a small amount of oil (I used coconut oil).
  4. Once hot, pour approximately 1/4 cup batter on pan.  Rotate the pan, spreading out the batter.
  5. Cook on medium heat until nearly cooked through, flip and cook a few seconds more.
  6. Remove from heat, add favorite toppings, fold up and eat!
  7. Repeat steps 4-6 until no more batter remains.
