Yes, I DO preheat the pan. And I lightly grease it. But that first crepe is so stubborn and falls apart. Every. Single. Time.
I brought this up on my Instagram a few weeks ago, and this seems to be a common issue. It's annoying, but it's all aesthetics - they still taste great and my kids aren't picky (if it's a crepe, they'll eat it). But, needless to say, the first crepe never makes it to the photo shoot 😉
Although the first crepe tends to have issues, all subsequent ones turn out perfectly in this Paleo crepe recipe. Which, is good news because these keto crepes are an absolute weekend breakfast must-have!
These low carb crepes aren't just Paleo, but keto friendly as well. Nothing better than a fresh batch of dairy free keto crepes filled with coconut cream and a few fresh strawberries.
The Best Low Carb Paleo Crepes
This is the best low carb crepe recipe because these crepes are:

These crepes are paper thin, soft, pliable and easy to wrap up. They are lightly sweetened, perfect for a healthy crepe breakfast. You can add sweet or savory toppings - whatever you desire.
Better yet, these almond flour crepes require just six simple ingredients to make.
Ingredients in Paleo Almond Flour Crepes
- eggs
- water (or plant based milk)
- maple syrup (liquid sweetener for Keto)
- vanilla extract
- blanched almond flour
- cinnamon (optional)
- oil for cooking
The bulk of this recipe is eggs, water and almond flour. The water can be substituted with any form of liquid. Such as, almond milk or coconut milk.
These crepes are sweetened with maple syrup. However, to make these lower carb and keto friendly, swap the maple syrup for a sugar-free sweetener.
How to Make Almond Flour Crepes
These dairy free almond flour crepes are SO easy to whip up.
First, whisk together eggs, water, maple syrup and vanilla in a medium-sized mixing bowl.
Next, add in all dry ingredients and whisk until batter is well combined.
Preheat frying pan on medium heat and grease with a bit of oil. (I used coconut oil.)
Once hot, pour approximately ¼ cup batter on pan. Lift up the pan and rotate it to spread the batter across the entire bottom of the pan, then place it back on the heat.
Cook on medium-low heat until nearly cooked through, flip and cook a few seconds more.
Remove the crepe from the pan, add your favorite toppings and eat!
Repeat this process until you have used up all the batter.
These almond flour keto crepes are best eaten hot off the pan, but you can keep them warm at a low temp in the oven if you plan on making a big batch to eat at once.
I stuffed these with coconut cream, bee pollen, hemp seeds, cinnamon and fresh strawberries. However, you can use any of your favorite sweet or savory crepe toppings.

Instructions
- Whisk together eggs, water, maple syrup and vanilla in medium-sized mixing bowl.
- Add in almond flour and cinnamon, whisk.
- Preheat frying pan on medium heat and add a small amount of oil (I used coconut oil).
- Once hot, pour approximately ¼ cup batter on pan. Rotate the pan, spreading out the batter.
- Cook on medium heat until nearly cooked through, flip and cook a few seconds more.
- Remove from heat, add favorite toppings, fold up and eat!
- Repeat steps 4-6 until no more batter remains.

Made these they were delicious, it trying not to eat eggs, only egg whites... is it possible to make the crepe with egg white only ?

I haven't used only egg whites in this recipe. I assume it would change the texture of the crepes. I recommend using whole eggs.

Hi Sue! The creamy white spread is just coconut cream - the cream from a can of full fat coconut milk. It gets all melty between the crepes and is a delicious low carb addition if you like coconut 🙂
