Tigernut Flour Crackers (Nut Free)

Description

Nut free crackers made with tigernut flour and seeds.  These crackers have a slightly sweet, nutty flavor and crunchy texture.


Ingredients

Scale
  • 1/3 cup tigernut flour (36g)
  • 1/4 cup raw sunflower seeds
  • 2 Tbsp tapioca starch
  • 1 tsp chia seeds
  • 1 tsp sesame seeds
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1/4 tsp salt
  • 1 Tbsp olive oil
  • 1 Tbsp water


Instructions

  1. Preheat your oven to 350 degrees F.
  2. In your food processor, combine all the dry cracker ingredients.  Blend to a fine powder.
  3. Add in the wet ingredients.  Blend until the mixture is well combined.
  4. Remove the dough from your food processor and roll it into a ball, then flatten it on a sheet of parchment paper.  Place another sheet of parchment paper on top of the dough and (using a rolling pin) roll it to about 1/8" thick.
  5. Remove the top layer of parchment and cut the crackers into squares using a knife or pizza cutter.
  6. Transfer the crackers (on parchment) to a baking sheet and bake in the oven at 350 degrees for 10 minutes.
  7. After 10 minutes, remove the crackers from the oven and flip them*
  8. Place them back in the oven and bake another 3-5 minutes.
  9. After baking, remove the crackers from the oven and cool them to room temperature on a wire cooling rack.
  10. Storage: place crackers in an air-tight container in the pantry for up to one week.

*Cooking time may vary depending on cracker thickness.
