Chocolate Almond Balls (No Bake)

Description

These healthy chocolate almond balls have a chewy center that's encased in a rich chocolate shell.  This recipe is no bake, paleo, vegan and gluten free.

Filling

  • 1/2 cup unsweetened almond butter
  • 1/4 cup maple syrup
  • 1/3 cup cocoa powder (32g)

Instructions

  1. Line a small baking sheet or plate with parchment paper and set aside.
  2. In a medium-sized mixing bowl, combine the almond butter, maple syrup and cocoa powder.  Mix until well combined.
  3. Roll the mixture into balls, each about 1 tablespoon in size.  Set the balls on the lined baking sheet.
  4. Place the balls in the freezer for one hour to chill.
  5. Melt the dark chocolate and coconut oil in a small saucepan, over low heat (or in the microwave at 20-30 second intervals).
  6. Grab the balls from the freezer and dip them, one at a time, into the melted chocolate.  Place them back on the lined baking sheet to set.
  7. Drizzle any remaining dark chocolate over the balls and top with a pinch of flaked sea salt.
  8. Store balls in an airtight container in the fridge or freezer.
