    Chocolate Almond Balls (No Bake)

    These chocolate almond balls have a chewy filling that's made with cocoa powder, almond butter and maple syrup. They are dipped in dark chocolate and topped with a pinch of flaked salt. This chocolate almond ball recipe is no bake, gluten free, vegan and paleo friendly.

    Besides being a healthy dessert, the best thing about these chocolate almond balls are that they only require 3 ingredients!!

    They're made without dates too, so you don't need a food processor or blender to make them. Simply combine the filling ingredients and enjoy as-is, or freeze them and dip them in dark chocolate (like I did). Either way, you can't go wrong.

    Furthermore, these bites don't require any baking and they're gluten free, dairy free, paleo and vegan friendly!

    Ingredients

    These chocolate almond balls require 3 ingredients, but if you want to add the chocolate topping and salt you'll need a few more. The full recipe can be found in the recipe card below, but here's a list of what you need:

    • almond butter - unsweetened, unsalted
    • maple syrup - you can swap this ingredient with another liquid sweetener, but maple syrup brings a lovely flavor and texture.
    • cocoa powder - I like using Dutch processed cocoa powder for this recipe.
    • dark chocolate - optional for the chocolate coating.
    • coconut oil - optional ingredient for thinning the chocolate.
    • flaked salt - not required, but brings out the flavors

    How to Make Chocolate Almond Balls

    These chocolate almond energy bites are no bake, so all you have to do is make the filling, chill and then dip them in dark chocolate. Here are the step-by-step instructions:

    Filling dough.
    1. Combine all filling ingredients.
    Rolled filling for balls.
    1. Roll filling into balls and place on a lined baking sheet.
    Dipping the balls in dark chocolate.
    1. Freeze fillings, then dip in dark chocolate.
    Balls dipped and decorated with flaked salt.
    1. Drizzle extra chocolate over the balls and top with flaked salt.
    1. Store in fridge or freezer.

    Storage

    These healthy almond bites are best stored in the fridge or freezer. Place them in an airtight container and store in the fridge for up to two weeks. For freezer storage, place them in a plastic bag and store them for up to two months.

    Description

    These healthy chocolate almond balls have a chewy center that's encased in a rich chocolate shell.  This recipe is no bake, paleo, vegan and gluten free.


    Ingredients

    Scale

    Filling

    • ½ cup unsweetened almond butter
    • ¼ cup maple syrup
    • ⅓ cup cocoa powder (32g)

    Coating (optional)

    • ½ cup dark chocolate chips
    • 1 tsp coconut oil

    Topping (optional)

    • flaked sea salt


    Instructions

    1. Line a small baking sheet or plate with parchment paper and set aside.
    2. In a medium-sized mixing bowl, combine the almond butter, maple syrup and cocoa powder.  Mix until well combined.
    3. Roll the mixture into balls, each about 1 tablespoon in size.  Set the balls on the lined baking sheet.
    4. Place the balls in the freezer for one hour to chill.
    5. Melt the dark chocolate and coconut oil in a small saucepan, over low heat (or in the microwave at 20-30 second intervals).
    6. Grab the balls from the freezer and dip them, one at a time, into the melted chocolate.  Place them back on the lined baking sheet to set.
    7. Drizzle any remaining dark chocolate over the balls and top with a pinch of flaked sea salt.
    8. Store balls in an airtight container in the fridge or freezer.

      Absolutely obsessed with these. Made them for my family for the first time two nights ago... making them again tonight because they disappeared so quickly!!! They are so simple to make but look so fancy. Do not skip the flakey salt!
