Description

These chocolate covered Collagen Protein Balls are a refreshing, high protein treat.  They are no-bake and require only 5 simple ingredients.


Ingredients

Filling

  • 1/2 cup almond butter* drippy, unsweetened
  • 1 Tbsp maple syrup (or sweetener of choice)
  • 1/2 tsp vanilla extract
  • 1/3 - 1/2 cup collagen peptides*
  • pinch of salt (optional)

Coating

  • 1/2 cup dark chocolate chips
  • 1/2 tsp coconut oil (optional)


Instructions

  1. Make the filling: combine all filling ingredients in a small mixing bowl.  (Start with just 1/3 cup collagen and add more as needed.)  Mix with a spatula until well combined.  The filling should be soft, but easily hold together.
  2. Roll the filling mixture into balls, about 1 tablespoon in size (making about 11-12 balls).  Set them on a parchment-lined plate or baking sheet.
  3. Freeze the fillings for at least 20 minutes to firm.
  4. Make the coating: place the chocolate and coconut oil in a small, microwaveable dish.  Melt on high in the microwave, at 20-30 second intervals, stirring between.
  5. Grab the fillings from the freezer and dip them (one at a time) into the melted chocolate.  Place them back onto your lined baking sheet to set.
  6. Optional: Drizzle any remaining chocolate over the balls and sprinkle with bee pollen or any desired topping before the chocolate sets.
  7. Store the collagen balls in an airtight container or baggie in the fridge or freezer.

Notes

*Depending on the type of almond butter and brand of collagen you use, you may have to slightly adjust the quantities.  Start with 1/3 cup of collagen, and gradually increase the quantity until you get the desired texture.  If the filling is too dry, add more nut butter.
