Description
This gluten free chocolate mug cake is moist and tender with a rich chocolate flavor. It's gluten free, dairy free, nut free and paleo friendly.
Ingredients

- 3 Tbsp cocoa powder (15g)
- 1 Tbsp coconut flour (7g)
- 1 Tbsp tapioca starch (8g)
- 2 Tbsp coconut sugar (18g)
- 1/2 tsp baking powder
- pinch of salt
- 1 large egg
- 1/4 cup yogurt (I used unsweetened coconut yogurt)
- 1 tsp vanilla extract
Instructions
- In a small microwaveable bowl or large mug, combine the dry ingredients. This includes the cocoa powder, coconut flour, tapioca starch, coconut sugar and salt.
- Mix in the wet ingredients: egg, yogurt and vanilla. Whisk with a fork until smooth.
- Let the batter rest for 2 minutes to thicken.
- Place the mug cake in your microwave and cook on high for 2 minutes*
- Carefully remove the mug cake from your microwave and cool for 5 minutes. Add favorite toppings and enjoy!
