If you follow me on Instagram then you know my love for mug cakes is real. For the past year, I've been eating one weekly, going through phases where I eat them daily.
I don't always use the same ingredients. For instance, sometimes I like to add protein powder or collagen. And I like to mix up the flavors like in my Chai, Turmeric and Maca Mug Cake. But THIS moist Chocolate Mug Cake Recipe is one of my all time favorites. It is simply the best low carb chocolate mug cake.
Mug cakes are great for breakfast. Especially if you prefer something sweet rather than savory. It all depends on the ingredients you use. As, some mug cake recipes are much more of a dessert than a healthy, hearty breakfast.
Ingredients In Paleo Chocolate Mug Cake
This healthy, low carb mug cake contains just 8 every-day ingredients:
- cocoa powder
- coconut flour
- tapioca flour
- monk fruit sweetener
- baking powder
- salt
- egg
- water
This mug cake packs about 10 grams of protein and only 1 gram of sugar if using a sweetener like monk fruit. However, the monk fruit can be swapped with any granular sugar or sweetener.
The combination of cocoa powder, coconut flour and tapioca flour creates a moist, low carb mug cake. These three ingredients are a must!
How to Make a Moist Chocolate Mug Cake
It takes 3 minutes to make this mug cake. Really, just a couple minutes to combine all the ingredients and bake it in the microwave.
First, combine all ingredients in a microwave safe cup or small bowl. Mix well. Then, place the dish in the microwave and cook on high for 2 minutes. Just note, cooking time will vary slightly depending on your microwave and the size of the dish you use.
When you take the mug cake out of the microwave it should be slightly under-baked. As, it will continue to set after removal.
Lastly, add your favorite toppings and eat!
I typically eat mug cakes for breakfast, as I'm not much of a savory breakfast person. But, this gluten free mug cake would also make a great dessert or snack. It is low calorie so making it into a full meal requires toppings like nut butter, yogurt, cream cheese, fruit, granola... Stand-alone it is a delicious snack that can curb any sweet tooth and you can eat the entire thing without over-doing it on the sugar.
My favorite way to top my mug cakes are with nut/seed butter and frozen blueberries. This particular mug cake has tahini, strawberries, pumpkin seeds, goji berries, and bee pollen.

Ingredients
- 3 Tbsp cocoa powder
- 1 Tbsp coconut flour
- 1 Tbsp tapioca flour

- pinch of salt
- 1 large egg
- 3 Tbsp water
Instructions
- In a small microwaveable bowl or large mug, combine all ingredients. Mix well.
- Place in microwave and cook on high for 2 minutes*
- Remove from microwave, cool slightly and top with your favorite toppings.
