Chocolate Tigernut Waffles

Paleo and Vegan chocolate waffles made with tigernut flour.  Kid friendly, low in added sugar and perfect for a sweet but healthy breakfast.


  • 1/2 cup tigernut flour (50g)*
  • 3 Tbsp cocoa powder (18g)
  • 3 Tbsp ground flax (18g)
  • 1 tsp baking powder
  • 1-2 Tbsp maple syrup (depending on taste preference)
  • 1 Tbsp avocado oil
  • 1 tsp vanilla extract
  • 1/3 cup water


  1. In a medium-sized mixing bowl, combine tigernut flour, cocoa powder, ground flax and baking powder.
  2. Mix in remaining ingredients.
  3. Let batter sit for 5 minutes to thicken.  While waiting, preheat miniature waffle iron.
  4. Pour about 3 tablespoons batter onto preheated mini waffle iron.
  5. Cook until done.
  6. Repeat steps 4-5 until all batter has been used up.


*If tigernut flour has clumps, sift prior to using.  Measure by spoon and level method or simply by weight.
