Baked Cinnamon Plantain Fries (Whole30, Vegan)

Healthy Baked Cinnamon Plantain Fries – Paleo, Vegan, Whole30 and AIP compliant

Ingredients

  • 2 extra large, ripe plantains
  • 1/2 Tbsp avocado oil (or olive oil)
  • 1 tsp ground cinnamon
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 375 degrees F.
  2. Peel plantains and cut into fry shapes.
  3. Place cut plantains in a large mixing bowl.  Drizzle with oil, then mix using tongs or your hands.
  4. Sprinkle cinnamon and salt on fries.  Mix until well coated.
  5. Place fries on a lined or greased baking sheet so that none of the fries are overlapping.
  6. Place pan on the bottom rack of oven and bake at 375 degrees for 20 minutes or until done.
