Cinnamon Roll Energy Bites

Description

High protein energy balls; Paleo, Vegan and great for a quick snack.


Ingredients

Scale
  • 1/2 Cup pecans (50 g)
  • 1/2 Cup raisins (80 g)
  • 3 Tbsp vanilla protein
  • 2 Tbsp coconut flour
  • 1 tsp cinnamon
  • pinch of salt
  • 1-2 Tbsp water
  • 1/2 tsp vanilla

Instructions

  1. Preheat oven to 350 degrees F.
  2. In food processor, blend raisins and pecans to a course flour.
  3. Add remaining ingredients, except water and blend.
  4. Add water, 1 Tbsp at a time, and blend until mixture is sticky enough to form into balls.
  5. Remove dough from food processor, roll into balls (about 10) and place on baking sheet.
  6. Bake at 350 degrees for 8 minutes or until golden brown.
  7. Remove from oven and cool.
