Description
These cinnamon roll energy bites are great for a quick snack or healthy dessert. They're paleo, vegan and don't require any baking!
Ingredients
Scale
- 1/2 cup unsweetened shredded coconut (56g)
- 1/2 cup raw pecans (56g)
- 1/2 cup raisins (82g)
- 1/4 cup protein powder (30g)
- 1/2 tsp cinnamon
- 1/8 tsp salt
- 1 Tbsp water
- 1 tsp vanilla extract
Instructions
- Combine all ingredients in a food processor.
- Blend, stopping to scrape the sides if needed, until the mixture starts to clump.
- Roll the mixture into balls, each about 1 tablespoon in size. You should get 13 balls.
- Enjoy as-is or roll into coconut or dip in white chocolate.
- Best stored in an airtight container or baggie in the fridge or freezer.
Notes
I used Equip cinnamon roll protein powder, but any protein powder (or collagen peptides) should work for this recipe.
If your mixture is too dry and won't hold it's shape when rolled into balls, then add another tablespoon of water and blend.
