Cinnamon Collagen Protein Bars (Paleo, Keto)

Description

Healthy, low carb collagen protein bars flavored with cinnamon.  This easy recipe is Paleo, keto, no bake and low in sugar.


Ingredients

Scale
  • 1/2 cup almonds (raw or dry roasted)
  • 1/2 cup raw pumpkin seeds
  • 1/4 cup ground flax seed*
  • 1/4 cup collagen peptides
  • 2 Tbsp monk fruit sweetener (or coconut sugar)
  • 1 tsp cinnamon
  • pinch of salt (omit if almonds are salted)
  • 2 Tbsp water
  • 1 tsp vanilla extract

Instructions

  1. Place almonds and pumpkin seeds in food processor.  Blend to a course flour.
  2. Add ground flax, collagen, monk fruit, cinnamon and salt.  Blend.
  3. Add in water and vanilla.  Blend until mixture forms a ball in the food processor.
  4. Firmly press the dough into a lined 8" x 4" baking pan.
  5. Freeze at least one hour.
  6. Remove from pan and cut into eight equal pieces.
  7. Store in fridge or freezer.

Notes

*I make my own ground flax by grinding whole flax seed in a coffee grinder.
