Description

These healthy parsnip fries are seasoned with garlic and salt and baked in the oven until crisp. They're a great side dish for nearly any diet - paleo, whole30, vegan and low carb.

Instructions

  1. Preheat oven to 400 degrees F.
  2. Rinse and peel the outer skin of the parsnips.  Cut the tops off, then cut the parsnips into fry shapes.  Be sure to remove and discard of the inner core, as it tends to be woody and hard to eat.
  3. Place the parsnips in a mixing bowl and coat with avocado oil.
  4. Sprinkle garlic and salt onto parsnips and mix until well coated.
  5. Spread the fries out on a baking sheet so that none of them are overlapping.
  6. Place the fries in your oven and bake at 400 degrees for 20 minutes.  Remove from the oven, flip and bake another 5-10 minutes.
  7. After baking, remove from the oven and top with flaked sea salt.
  8. Serve warm as-is or with your favorite dipping sauce.
