Description
These healthy frozen yogurt protein bars have a creamy yogurt filling that's coated in dark chocolate. They're the perfect protein-packed treat for the summer!

Filling
- 1 cup unsweetened yogurt (I used Coco June coconut yogurt)
- 1/4 cup unsweetened sunflower seed butter
- 2 Tbsp raw honey (or maple syrup)
- 1/3 cup vanilla protein powder (I used Prime Protein Beef Isolate)
Coating
- 1 cup dark chocolate chips
- 1 tsp coconut oil (optional for thinning the chocolate)
Instructions
- Place your popsicle molds on a baking sheet and set aside. I used small silicone popsicle molds and got 11 yogurt bars.
- In a large bowl, whisk together all of your filling ingredients. This includes the yogurt, sunflower seed butter, honey and protein powder.
- Pour the filling into your popsicle molds, filling each slot nearly to the top. Add the popsicle sticks.
- Freeze the fillings for at least 4 hours, or until set.
- Once frozen, melt the chocolate and coconut oil* Pour it into a cup (just slightly larger than your popsicles) and dip the fillings into the chocolate.
- Place the dipped bars on a parchment-lined baking sheet to set.
- You can enjoy them immediately, or pop them back in the freezer to serve later.
- Store bars in an airtight baggie in the freezer, up to two months.
Notes
*You can melt your chocolate and coconut oil in a small saucepan, over low heat. Or, melt them in the microwave at 20-30 second intervals, stirring in between.
