    Frozen Yogurt Protein Bars (Healthy, Paleo)

    These frozen yogurt protein bars have a creamy protein filling that's coated in a dark chocolate shell. They're made with yogurt, protein powder and sunflower seed butter and sweetened with a little raw honey (or maple syrup). These frozen protein bars are gluten free, dairy free and paleo friendly.

    Who wouldn't want a healthy protein bar disguised as an ice cream bar?! That's exactly what these frozen yogurt protein bars are - healthy protein bars made with minimal ingredients, that taste like dessert but pack a good dose of protein.

    These yogurt bars have a creamy filling that's made with yogurt, sunflower seed butter, raw honey and protein powder. They don't get icy when frozen and can actually be made with or without the chocolate shell.

    This recipe is gluten free, dairy free and paleo friendly - a dessert the whole family can enjoy!

    Ingredients

    The full recipe for these frozen yogurt protein bars can be found in the recipe card below, but here's an overview of what you'll need:

    • yogurt - I used dairy free coconut yogurt, but any type will work. The thicker the yogurt, the creamier the filling will be.
    • sunflower seed butter - or any unsweetened nut/seed butter
    • honey - I recommend raw honey, but maple syrup works well too.
    • protein powder - This recipe will work best with beef protein isolate (what I used), whey protein or collagen peptides. Some plant based protein powders may work, but I have not tried them for this recipe.
    • dark chocolate - to coat the ice cream bars. You can go without the chocolate if you prefer.
    • coconut oil - optional ingredient for thinning the chocolate

    How to Make Frozen Yogurt Protein Bars

    The filling for these bars is made in one bowl, poured into a silicone popsicle mold and then frozen. Once frozen, you can dip the bars in dark chocolate or go without. Here are the steps:

    1. Place your popsicle molds on a baking sheet and set aside. I used small silicone popsicle molds and got 11 yogurt bars.

    1. In a large bowl, whisk together all of your filling ingredients.

    1. Pour the filling into your popsicle molds, filling each slot nearly to the top. Add the popsicle sticks. Freeze for at least 4 hours.

    1. Once frozen, melt the chocolate and coconut oil. Pour it into a cup and dip the fillings into the chocolate.
    1. Place the dipped bars on a parchment-lined baking sheet to set.
    1. You can enjoy them immediately, or pop them back in the freezer to serve later.

    Tips and Tricks

    • Use a thick yogurt - it will make the filling creamier.
    • Swap the honey for maple syrup - I find honey makes the bars a bit creamier and I love the flavor in combination with sunflower seed butter. However, I've tried these with maple syrup too and they're still great!
    • Use any nut butter - while I love sunflower seed butter in this recipe, any nut or seed butter will work.
    • Thin the chocolate with coconut oil - adding a little coconut oil to the melted chocolate makes dipping the bars slightly easier.

    Storage

    Place these frozen yogurt bars in an airtight baggie and store in the freezer for up to two months.

    Can I use any type of protein powder?

    I recommend either a beef isolate protein powder, whey protein or collagen peptides.

    What yogurt works best?

    While any yogurt will work, thicker yogurts will make the filling creamier. So, a thick coconut yogurt or Greek yogurt are best.

    What are the macros for these frozen yogurt bars?

    I did not calculate the macros for these bars since they will vary depending on the brand of ingredients you use. If you want to calculate the macros, you can use a free calculator like the one in MyFitnessPal.

    Ingredients

    • 1 cup unsweetened yogurt (I used Coco June coconut yogurt)
    • ¼ cup unsweetened sunflower seed butter
    • 2 Tbsp raw honey (or maple syrup)
    • ⅓ cup vanilla protein powder (I used Prime Protein Beef Isolate)

    Coating

    • 1 cup dark chocolate chips
    • 1 tsp coconut oil (optional for thinning the chocolate)


    Instructions

    2. In a large bowl, whisk together all of your filling ingredients.  This includes the yogurt, sunflower seed butter, honey and protein powder.

    5. Once frozen, melt the chocolate and coconut oil*  Pour it into a cup (just slightly larger than your popsicles) and dip the fillings into the chocolate.
    6. Place the dipped bars on a parchment-lined baking sheet to set.
    7. You can enjoy them immediately, or pop them back in the freezer to serve later.
    8. Store bars in an airtight baggie in the freezer, up to two months.

    Notes

    *You can melt your chocolate and coconut oil in a small saucepan, over low heat.  Or, melt them in the microwave at 20-30 second intervals, stirring in between.
