Healthy Almond Flour Waffles (Paleo)

Description

Healthy almond flour waffles with a crisp exterior and tender center.  They're gluten free, dairy free and paleo friendly.


Ingredients

Scale
  • 3 large eggs
  • 3 Tbsp coconut oil, melted
  • 2 Tbsp maple syrup
  • 2 Tbsp water
  • 1 tsp vanilla extract
  • 1 cup blanched almond flour (90g)
  • 1/2 cup tapioca starch (65g)
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Place a wire cooling rack in your oven and preheat your oven to 300 degrees F.
  2. Plug in your waffle iron to preheat.
  3. In a large mixing bowl, combine the wet waffle ingredients.  This includes the eggs, melted coconut oil, maple syrup, water and vanilla.
  4. Mix in the dry ingredients.  This includes the almond flour, tapioca starch, baking soda and salt.
  5. Let the batter rest for 5 minutes.
  6. Scoop the batter onto your preheated waffle iron and cook until slightly browned.
  7. Remove the waffle and place it in your oven, on the wire cooling rack.
  8. Repeat until no more batter remains.
