    Healthy Almond Flour Waffles (Gluten Free, Paleo)

    These healthy almond flour waffles are just what you need for a satisfying breakfast. They're made with almond flour, lightly sweetened with maple syrup and perfectly crisp. These waffles are gluten free, dairy free, paleo friendly and refined sugar free.

    I got a new waffle maker, so have been putting it to good use with these healthy almond flour waffles!

    My family and I love crispy waffles, so these hit the spot. They're mildly sweet, crisp on the outside and tender inside. We love pairing them with yogurt, berries and a bit of maple syrup, but the topping options are endless!

    These almond flour waffles are obviously made with almond flour, they're also refined sugar free and paleo friendly. This is the perfect recipe for a well rounded breakfast that the whole family will enjoy!

    Ingredients

    These paleo almond flour waffles require less than 10 ingredients. Here's a list of what you need to make them:

    • large eggs - to bind the ingredients, no egg substitute has been tested
    • maple syrup - may be swapped with any liquid sweetener
    • coconut oil - improves the waffle texture
    • water - to thin the batter
    • vanilla extract - added for flavor
    • blanched almond flour - since these are almond flour waffles
    • tapioca starch - necessary for texture purposes. You may swap tapioca starch with arrowroot or potato starch.
    • baking soda - for the rise
    • salt - enhances the flavors

    How to Make Waffles with Almond Flour

    To make these waffles, you'll need a mixing bowl, whisk and the required ingredients. You'll also need a waffle maker. I have a ceramic Belgian waffle maker, but have also made these in my mini waffle maker - both work great. Here's how to make them:

    1. Place a wire cooling rack in your oven and preheat your oven to 300 degrees F.
    2. Plug in your waffle iron to preheat.
    3. In a large mixing bowl, combine the wet waffle ingredients.
    4. Mix in the dry ingredients.
    5. Let the batter rest for 5 minutes.
    1. Scoop the batter onto your preheated waffle iron and cook until slightly browned.
    2. Remove the waffle and place it in your oven, on the wire cooling rack.
    3. Repeat until no more batter remains.

    Tips and Tricks

    • Let the waffles cook slightly longer than usual - cooking them slightly longer on the waffle iron will make the waffles crispier.
    • Heat waffles in oven - placing the waffles in your oven after cooking helps with the crispness. It also keeps the waffles warm until you're ready to serve.
    • Add mix-ins - switch things up by adding extra flavorings like cinnamon and pumpkin spice. Fold chocolate chips or chopped nuts into the batter, or swap the water for a flavored milk.

    Storage

    Let any leftover waffles cool to room temperature. Then, store in an airtight container or baggie at room temperature for 1-2 days, in the fridge up to one week, or in the freezer up to one month.

    Waffles will lose their crispness during storage, but you can crisp them back up in the oven, toaster oven or air fryer.

    Ingredients

    Scale
    • 3 large eggs
    • 3 Tbsp coconut oil, melted
    • 2 Tbsp maple syrup
    • 2 Tbsp water
    • 1 tsp vanilla extract
    • 1 cup blanched almond flour (90g)
    • ½ cup tapioca starch (65g)
    • ½ tsp baking soda
    • ¼ tsp salt

    Instructions
