Description
These healthy applesauce muffins are gluten free, egg free, nut free and only sweetened with applesauce (no sugar). They're perfect for babies and toddlers.

- 1/2 cup cassava flour (67g)
- 1/4 cup coconut flour (27g)
- 2 Tbsp ground flax*
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsweetened applesauce
- 2 Tbsp avocado oil
- 1/2 tsp vanilla extract
- 1/2 cup water
Instructions
- Preheat oven to 350 degrees F.
- In a medium-sized mixing bowl, combine cassava flour, coconut flour, ground flax, cinnamon, baking soda and salt.
- Whisk in applesauce, avocado oil, vanilla and water.
- Let the batter sit for 5 minutes to thicken (batter will be quite thick).
- Scoop the batter into a miniature silicone muffin pan (about 2 tablespoons batter per muffin, making 11-12 mini muffins).
- Place in the preheated oven and bake at 350 degrees for 20-25 minutes.
- Cool for a few minutes in the baking pan, then remove and cool to room temperature on a wire cooling rack.
- Best stored in an air-tight container in the fridge up to one week.

*I grind whole flax seed in a coffee grinder to make freshly ground flax.
