Healthy Applesauce Muffins (Gluten Free, No Sugar)

Description

These healthy applesauce muffins are gluten free, egg free, nut free and only sweetened with applesauce (no sugar).  They're perfect for babies and toddlers.


Ingredients

Scale
  • 1/2 cup cassava flour (67g)
  • 1/4 cup coconut flour (27g)
  • 2 Tbsp ground flax*
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsweetened applesauce
  • 2 Tbsp avocado oil
  • 1/2 tsp vanilla extract
  • 1/2 cup water

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a medium-sized mixing bowl, combine cassava flour, coconut flour, ground flax, cinnamon, baking soda and salt.
  3. Whisk in applesauce, avocado oil, vanilla and water.
  4. Let the batter sit for 5 minutes to thicken (batter will be quite thick).
  5. Scoop the batter into a miniature silicone muffin pan (about 2 tablespoons batter per muffin, making 11-12 mini muffins).
  6. Place in the preheated oven and bake at 350 degrees for 20-25 minutes.
  7. Cool for a few minutes in the baking pan, then remove and cool to room temperature on a wire cooling rack.
  8. Best stored in an air-tight container in the fridge up to one week.

Notes

*I grind whole flax seed in a coffee grinder to make freshly ground flax.
