Healthy Blueberry Banana Bread (Paleo, No Added Sugar)

This healthy, Paleo banana bread is only sweetened with bananas and blueberries.  Perfect for breakfast or snack and kid approved!


  • 1 large, ripe banana (120g)
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup blanched almond flour (100g)
  • 1/3 cup tapioca flour (45g)
  • 1/4 cup coconut flour (33g)
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup fresh blueberries
  • 1/3 cup walnut halves, chopped


  1. Preheat oven to 350 degrees F. 
  2. Peel banana and mash in a medium sized mixing bowl. 
  3. Stir in eggs and vanilla. 
  4. Mix in all dry ingredients (except blueberries and walnuts).
  5. Chop walnuts and add to batter, along with the fresh blueberries.  Mix well.
  6. Pour batter into a parchment lined 8" x 4" baking pan and bake at 350 degrees for 40-45 minutes.  (Optional: add additional blueberries and walnuts to the top of the loaf prior to baking)
  7. After baking, remove loaf from pan and cool on a cooling rack.
  8. Store in fridge.
