Description
These healthy hemp protein waffles are made with hemp protein powder and have a nutty vanilla flavor. These waffles are extra crisp, gluten free, dairy free and paleo friendly.
Ingredients

- 1 cup blanched almond flour (95g)
- 1/3 cup hemp protein powder (25g)
- 1/4 cup tapioca starch (32g)
- 2 Tbsp coconut sugar
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 large egg*
- 2 Tbsp avocado oil
- 1 tsp vanilla extract
- 1/2 cup water*
Instructions
- Place a wire cooling rack in your oven and preheat your oven to 250 degrees F. Plug in your waffle iron. (I used my Dash mini waffle iron.)
- In a medium sized mixing bowl, combine the almond flour, hemp protein powder, tapioca starch, coconut sugar, baking soda and salt.
- Mix in the egg, avocado oil, vanilla and water. Whisk until smooth.
- Let the batter sit for 5 minutes.
- Scoop the batter onto your waffle iron and cook until done. (I scooped about 3 tablespoons of batter into my mini waffle iron.)
- When the waffle is done cooking, remove it from the waffle iron and place it in your preheated oven, where it will further crisp up.
- Repeat until no more batter remains. (Recipe makes 8 mini waffles.)
Notes
For best results, measure ingredients by weight, when given.
*To make these waffles vegan, omit the egg and add an extra 1/4 cup of water. The waffles will have a slightly different texture, but still turn out great.
