Healthy Hemp Protein Waffles

Description

These healthy hemp protein waffles are made with hemp protein powder and have a nutty vanilla flavor.  These waffles are extra crisp, gluten free, dairy free and paleo friendly.

Instructions

  1. Place a wire cooling rack in your oven and preheat your oven to 250 degrees F. Plug in your waffle iron.  (I used my Dash mini waffle iron.)
  2. In a medium sized mixing bowl, combine the almond flour, hemp protein powder, tapioca starch, coconut sugar, baking soda and salt.
  3. Mix in the egg, avocado oil, vanilla and water. Whisk until smooth.
  4. Let the batter sit for 5 minutes.
  5. Scoop the batter onto your waffle iron and cook until done. (I scooped about 3 tablespoons of batter into my mini waffle iron.)

  6. When the waffle is done cooking, remove it from the waffle iron and place it in your preheated oven, where it will further crisp up.
  7. Repeat until no more batter remains.  (Recipe makes 8 mini waffles.)

Notes

For best results, measure ingredients by weight, when given.

*To make these waffles vegan, omit the egg and add an extra 1/4 cup of water.  The waffles will have a slightly different texture, but still turn out great.
