    Healthy Hemp Protein Waffles

    These healthy hemp protein waffles are great for a satisfying breakfast. They're packed with protein, crispy and crunchy and have a nutty vanilla flavor. This hemp waffle recipe is gluten free, dairy free and paleo friendly.

    There is nothing I like more than a crispy, crunchy waffle to start my day. And these healthy hemp protein waffles are a favorite of mine - the kids love them too!

    They are extra crisp, made with a combination of almond flour, tapioca starch and hemp protein powder and have a delicious vanilla flavor. They're a great way to enjoy waffles, but still squeeze in some protein.

    Ingredients

    Here's a list of what you need to make these gluten free hemp protein waffles:

    • blanched almond flour
    • tapioca starch - needed for texture purposes. You may swap it with arrowroot starch.
    • hemp protein powder - I love Evo Hemp hemp protein
    • coconut sugar - or your favorite granulated sugar
    • baking soda
    • salt
    • egg*
    • avocado oil - or any neutral cooking oil
    • vanilla extract
    • water

    These waffles can also be made egg free (vegan) by omitting the egg and adding extra water. The waffles will have a slightly different texture, but still turn out great.

    How to Make Waffles with Hemp Protein Powder

    The batter for these hemp protein waffles is made in one bowl, then baked in a waffle iron and placed in an oven to keep crisp. I used my Dash mini waffle iron, but any waffle iron will work.

    First, place a wire cooling rack in your oven and preheat your oven to 250 degrees F. Plug in your waffle iron.

    In a medium sized mixing bowl, combine the almond flour, hemp protein powder, tapioca starch, coconut sugar, baking soda and salt.

    Mix in the egg, avocado oil, vanilla and water. Whisk until smooth. Let the batter sit for 5 minutes.

    Scoop the batter onto your waffle iron and cook until done. (I scooped about 3 tablespoons of batter into my mini waffle iron.)

    When the waffle is done cooking, remove it from the waffle iron and place it in your preheated oven, where it will further crisp up.

    Repeat these steps until you've used up all of your waffle batter. I was able to get 8 miniature waffles.

    You can serve these waffles with sweet or savory toppings.

    Storage

    Place leftover waffles in an airtight container and eat within 5 days. They will lose their crispness during storage, but you can pop them back in the oven or toaster oven to crisp back up.

    Waffle Toppings

    These hemp waffles are slightly sweet, but will go with both sweet and savory toppings. Here are some easy ideas:

    • maple syrup or honey
    • coconut butter or your favorite nut/seed butter
    • yogurt and some cinnamon
    • mashed avocado and a runny egg
    • cream cheese
    • homemade jam or jelly

    Ingredients

    Scale
    • 1 cup blanched almond flour (95g)
    • ⅓ cup hemp protein powder (25g)
    • ¼ cup tapioca starch (32g)
    • 2 Tbsp coconut sugar
    • ½ tsp baking soda
    • ¼ tsp salt
    • 1 large egg*
    • 2 Tbsp avocado oil
    • 1 tsp vanilla extract
    • ½ cup water*


    Instructions

    For best results, measure ingredients by weight, when given.
