Description
These hemp protein muffins are gluten free, dairy free and paleo friendly. They're made with hemp protein powder and lightly sweetened with honey.

- 3 large eggs
- 1/2 cup mashed banana (125g)
- 2 Tbsp honey
- 2 Tbsp water
- 1 tsp vanilla extract
- 1 cup blanched almond flour (95g)
- 1/2 cup hemp protein powder (40g)
- 1/3 cup tapioca starch (44g)
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
Instructions
- Preheat your oven to 350 degree F and line a muffin pan with 12 silicone muffin liners.
- In a medium-sized mixing bowl, whisk together the eggs, mashed banana, honey, water and vanilla.
- Add in the almond flour, hemp protein, tapioca starch, baking powder, cinnamon and salt. Whisk until smooth.
- Pour batter into the lined muffin pan, filling each slot about 3/4 full.
- Place the muffins in your preheated oven and bake at 350 degrees for 20 minutes.
- After baking, remove the hemp protein muffins from the oven and let them cool about 5 minutes in the pan. Then, transfer them to a wire cooling rack.
- Best stored in an airtight container in the fridge, up to one week.
