High Protein Chocolate Mousse (Vegan, Paleo)

Description

This high protein chocolate mousse is paleo, vegan and low carb.  It's slightly different from your traditional mousse recipe, but much healthier and just as tasty!


Ingredients

Scale
  • 3 oz dark chocolate (1/2 cup chocolate chips)
  • 1 cup yogurt (I used unsweetened coconut yogurt)
  • 2 Tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 cup chocolate protein powder (28g)
  • pinch of salt


Instructions

  1. Melt the dark chocolate.  Place the chocolate in a small mixing bowl and melt in the microwave at 20-30 second intervals, mixing in between*
  2. Add in the remaining ingredients and whisk until smooth.
  3. Separate into 3-4 small cups or serving dishes.
  4. Garnish and enjoy!
  5. Store leftovers in a sealed container in the fridge, up to one week.


Notes

*Make sure chocolate is warm and liquid, but not hot before adding in the other ingredients.
