Description
These paleo sunbutter cookies come together in minutes and taste similar to a peanut butter cookie (but they're completely nut free). This cookie recipe is paleo, gluten free, dairy free and nut free.

- 1/2 cup unsweetened sunbutter (aka sunflower seed butter)
- 1 large egg
- 2 Tbsp melted coconut oil
- 1 tsp vanilla extract
- 1/3 cup coconut sugar
- 2 Tbsp coconut flour
- 1/2 tsp baking soda
- flaked sea salt (for topping)
Instructions
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
- In a large bowl, combine sunbutter, egg, coconut oil, vanilla and coconut sugar. Whisk thoroughly using a fork.
- Mix in baking soda.
- Scoop the cookie dough onto the lined baking sheet. Each cookie should be about one rounded tablespoon in size.
- Place the cookies in the oven and bake at 350 degrees for 10 minutes.
- After baking, remove the cookies from the oven and sprinkle a little flaked sea salt on each one.
- Let the cookies cool on the baking pan for 10 minutes before removing. Then transfer them to a wire cooling rack.
- Storage: keep cookies in an airtight container or baggie in the fridge or freezer.
Notes
The dough can get quite oily - don't fret! It works and bakes into beautiful cookies.
