    Paleo Sunbutter Cookies (Gluten Free)

    These paleo sunbutter cookies taste just like a peanut butter cookie, but are completely nut free! They're made with sunflower seed butter, sweetened with coconut sugar and topped with flaked salt. Furthermore, this recipe is paleo, gluten free, dairy free and nut free.

    As someone who tries to incorporate allergy friendly recipes into my baking, sunbutter has quickly become one of my favorite ingredients!

    Sunbutter (aka sunflower seed butter) is an excellent nut free option, as it's made from roasted sunflower seeds. It tastes similar to peanut butter and can be used just like any other nut or seed butter in your favorite recipes.

    These sunbutter cookies are naturally gluten free and nut free, but taste very similar to a peanut butter cookie. They're made with just 8 simple ingredients and completely gluten free, dairy free, nut free and paleo friendly.

    Ingredients

    Here's what you need to make these gluten free sunbutter cookies:

    • sunbutter (aka sunflower seed butter) - I like to use unsweetened sunbutter that's made with sunflower seeds and salt, nothing else
    • egg
    • melted coconut oil
    • vanilla extract
    • coconut sugar - or your favorite sugar free sweetener for a low carb option
    • coconut flour - needed for texture purposes
    • baking soda
    • flaked sea salt - optional, but the perfect cookie topping

    How to Make Paleo Cookies with Sunbutter

    These paleo sunbutter cookies take literally 5 minutes to throw together. Easy peasy! Here's what you need to do:

    1. Preheat oven to 350 degrees F.  Line a baking sheet with parchment paper and set aside.
    2. In a large bowl, combine sunbutter, egg, coconut oil, vanilla and coconut sugar.  Whisk thoroughly using a fork.
    3. Mix in baking soda.
    1. Scoop the cookie dough onto the lined baking sheet.  Each cookie should be about one rounded tablespoon in size.
    2. Place the cookies in the oven and bake at 350 degrees for 10 minutes.
    3. After baking, remove the cookies from the oven and sprinkle a little flaked sea salt on each one. 
    4. Let the cookies cool on the baking pan for 10 minutes before removing.  Then transfer them to a wire cooling rack.

    Fun fact, these cookies will turn green on the inside once they've fully cooled. There's nothing wrong with them. It's just the sunbutter reacting with the baking soda.

    Storage

    These sunbutter cookies are best stored in the fridge or freezer.

    Place them in an airtight container or baggie. Eat within one week if storing in the fridge, or one month from the freezer.

    Are these sunbutter cookies gluten free?

    Yes! All of the ingredients in this sunbutter cookie recipe are gluten free and paleo friendly.

    Why do sunbutter cookies turn green?

    When baked, the chlorophyll in sunflower seeds reacts with baking soda. After cooling, the cookies turn green! It's completely harmless.

    What is the taste of sunbutter?

    Sunbutter tastes similar to peanut butter but has a more mild flavor. It's nutty and slightly earthy with a smooth, creamy texture.

    Are these sunbutter cookies keto?

    With one simple swap, these paleo sunbutter cookies can be keto friendly. Simply replace the coconut sugar with monk fruit sweetener, or your favorite granulated sweetener.

    These paleo sunbutter cookies come together in minutes and taste similar to a peanut butter cookie (but they're completely nut free).  This cookie recipe is paleo, gluten free, dairy free and nut free.


    Ingredients

    Scale
    • ½ cup unsweetened sunbutter (aka sunflower seed butter)
    • 1 large egg
    • 2 Tbsp melted coconut oil
    • 1 tsp vanilla extract
    • ⅓ cup coconut sugar

    Notes

    The dough can get quite oily - don't fret!  It works and bakes into beautiful cookies.
