- sunbutter (aka sunflower seed butter) - I like to use unsweetened sunbutter that's made with sunflower seeds and salt, nothing else
- egg
- melted coconut oil
- vanilla extract
- coconut sugar - or your favorite sugar free sweetener for a low carb option
- coconut flour - needed for texture purposes
- baking soda
- flaked sea salt - optional, but the perfect cookie topping
How to Make Paleo Cookies with Sunbutter
These paleo sunbutter cookies take literally 5 minutes to throw together. Easy peasy! Here's what you need to do:
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
- In a large bowl, combine sunbutter, egg, coconut oil, vanilla and coconut sugar. Whisk thoroughly using a fork.
- Mix in baking soda.
- Scoop the cookie dough onto the lined baking sheet. Each cookie should be about one rounded tablespoon in size.
- Place the cookies in the oven and bake at 350 degrees for 10 minutes.
- After baking, remove the cookies from the oven and sprinkle a little flaked sea salt on each one.
- Let the cookies cool on the baking pan for 10 minutes before removing. Then transfer them to a wire cooling rack.
