Description
Healthy, homemade sunbutter cups made with sunflower seed butter and covered in dark chocolate.
Ingredients

- 1 Tbsp cacao butter (14g)
- 1/2 cup Sunbutter (unsweetened)
- 2 Tbsp powdered monk fruit sweetener
- 1/2 cup dark chocolate
- 1 tsp coconut oil
- flaked sea salt (optional)
Instructions
- Melt the cacao butter*
- In a small mixing bowl, combine the melted cacao butter, sunbutter and powdered monk fruit sweetener. Mix until well combined.
- Scoop the mixture into a mini silicone muffin pan. Each slot should contain one tablespoon of the mixture, making 10 sunbutter cups.
- Freeze the cups for at least one hour, or until firm.
- Melt the dark chocolate and coconut oil.
- Once melted, grab the sunbutter cup fillings from the freezer. Remove each of them from the silicone pan.
- Dip the fillings into the melted chocolate. Place them on a parchment-lined plate or baking sheet to set.
- Optional: drizzle any remaining dark chocolate over the sunbutter cups and add a pinch of flaked sea salt.
- Place the sunbutter cups in the freezer to set the chocolate.
Notes
*You can either melt the cacao butter in the microwave or on the stovetop. For the microwave: break up the cacao wafers and place them in a small microwaveable dish. Heat on high for 20-30 second intervals, stirring between. For the stovetop: break up the cacao wafers and place them in a small saucepan. Melt over low heat.
