Description

Healthy protein yogurt bark that's quick and easy to make!  Perfect for a healthy dessert or satisfying snack.

Instructions

  1. Line a baking sheet or large plate with parchment paper and set aside.
  2. In a large mixing bowl, combine the yogurt, sunflower seed butter, maple syrup and protein powder. Mix until smooth.
  3. Spread the protein yogurt mixture over the parchment-lined baking sheet. You want it to be about 1/4 inch thick.
  4. Melt the dark chocolate and drizzle it over the top of the yogurt mixture. (If your chocolate is too thick to drizzle, try mixing in some coconut oil to thin it out.)
  5. Add the slivered almonds and pumpkin seeds on top.
  6. Lastly, place the yogurt bark in the freezer for at least 2 hours to set. Depending on how thick your bark is, you may need to freeze it longer.

  7. Once frozen, cut the bark to desired size and enjoy! I like letting it thaw a few minutes before eating, as it can be quite firm when frozen.
  8. Store any leftovers in a sealed baggie in the freezer.
