    This protein yogurt bark is a quick and easy recipe, great for a healthy dessert or snack. It's high in protein, made with just a few simple ingredients and low in added sugar.

    I love frozen yogurt bark for a satisfying snack or healthy dessert option. Not only is it delicious, but it's easy to make and you only need a few simple ingredients.

    This protein yogurt bark is made with yogurt (dairy free or regular will work), protein powder and sunflower seed butter (or any nut butter). The topping options are endless, but I went with dark chocolate, pumpkin seeds and slivered almonds.

    The great thing about this frozen protein bark is that the flavor options are endless. You can switch up the flavor of protein powder you use, or swap protein powder for collagen peptides. You can swap out the sunflower seed butter for almond butter, or top the bark with paleo granola.

    Here's what you'll need to make this healthy protein yogurt bark:

    • yogurt - I used a dairy free coconut yogurt. However, any type of yogurt will work, preferably one that is full fat and unsweetened.
    • sunflower seed butter - or any variety of nut butter.
    • maple syrup - for just a tad bit of sweetness. This ingredient is optional and can be swapped out with honey or any other liquid sweetener.
    • protein powder - I recommend pea protein powder for this recipe. I used a vanilla pea protein, but any flavor will work. Collagen peptides can also be used as a substitute.
    • dark chocolate - just a little on top for flavor. This is another optional ingredient.
    • slivered almonds and pumpkin seeds - great for an extra crunch! You can use any nut/seed variety or swap them out for granola.

    How to Make Protein Yogurt Bark

    This yogurt bark takes only a few minutes to throw together. The hardest part is waiting for it to set in the freezer. Here's what you need to do:

    First, line a baking sheet or large plate with parchment paper and set aside. Gather the necessary ingredients.

    In a large mixing bowl, combine the yogurt, sunflower seed butter, maple syrup and protein powder. Mix until smooth.

    Spread the protein yogurt mixture over the parchment-lined baking sheet. You want it to be about ¼ inch thick.

    Melt the dark chocolate and drizzle it over the top of the yogurt mixture. (If your chocolate is too thick to drizzle, try mixing in some coconut oil to thin it out.)

    Add the slivered almonds and pumpkin seeds on top.

    Lastly, place the yogurt bark in the freezer for at least 2 hours to set. Depending on how thick your bark is, you may need to freeze it longer.

    Once frozen, cut the bark to desired size and enjoy! I like letting it thaw a few minutes before eating, as it can be quite firm when frozen.

    This protein yogurt bark needs to be stored in the freezer. Place pieces in a sealed baggie and enjoy within one month.
