Description
These simple roasted potatoes are a great Paleo, Whole 30 and Vegan side dish.
Ingredients

- 24 oz mini potatoes (1.5 lb)
- 1 Tbsp avocado oil
- 1/2 tsp flaked salt
- ground pepper to taste
Instructions
- Preheat oven to 375 degrees F.
- Wash potatoes and cut in half.
- In a large bowl, coat potatoes in avocado oil.
- Add salt and pepper, mix.
- Spread out potatoes on a parchment lined baking sheet.
- Bake in the oven at 375 degrees for 30 minutes.
- Optional: Broil on high for 8 minutes
