Simple Salt & Pepper Roasted Potatoes

These Simple Salt & Pepper Roasted Potatoes are an easy to make side dish that the whole family can enjoy.  They are roasted in the oven, cooked in avocado oil and only seasoned with salt and pepper.  In addition, these baked potatoes are Paleo, Vegan, allergy friendly and Whole 30 approved.

Roasted potatoes are a weekly dinner go-to in our household.  I rotate among different potato varieties, but essentially make them the same way each time.

So today, I'm sharing these simple oven-baked potatoes.  They're only seasoned with salt and pepper.  In addition, they're perfectly cooked through and crisp on the outside.  These potatoes pair well with nearly any meal and are a kid favorite.

Ingredients for Baking Potatoes in the Oven

This roasted potato recipe is SO easy!  All you need are four ingredients:

  • potatoes
  • avocado oil
  • salt 
  • pepper

How to Make Salt & Pepper Roasted Potatoes

First, preheat your oven to 375 degrees F.

Next, chop potatoes in half.  Place the potatoes in a medium-sized mixing bowl and coat with avocado oil.  Then, sprinkle on salt and pepper.

Place the potatoes on a parchment lined baking pan.  Spread them out so that they lay flat.

How to cook potatoes in the oven

Lastly, place the potatoes in the oven and bake at 375 degrees for 30 minutes.  In addition, you may broil the potatoes for 8 minutes.  This makes them a little more crisp and browns the tops.

What to Serve with Roasted Potatoes?

These roasted potatoes are essentially giant french fries.  I love dipping them into Paleo ketchup and/or mustard, barbecue sauce or homemade guacamole.  They pair well with any type of meat dish.  Furthermore, they're excellent eaten alongside a salad or veggie dish.

Description

These simple roasted potatoes are a great Paleo, Whole 30 and Vegan side dish.


Ingredients

Scale
  • 24 oz mini potatoes (1.5 lb)
  • 1 Tbsp avocado oil
  • ½ tsp flaked salt
  • ground pepper to taste

Instructions

  1. Preheat oven to 375 degrees F.
  2. Wash potatoes and cut in half.
  3. In a large bowl, coat potatoes in avocado oil.
  4. Add salt and pepper, mix.
  5. Spread out potatoes on a parchment lined baking sheet.
  6. Bake in the oven at 375 degrees for 30 minutes.
  7. Optional: Broil on high for 8 minutes
