S'mores Blondies (Paleo, Vegan)

Description

These s'mores blondies are an excellent twist on your classic s'mores!  They are paleo, vegan and gluten free with a deliciously chewy texture.


Ingredients

Scale
  • 1/2 cup cassava flour (75g)
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup unsweetened almond butter 
  • 1/4 cup maple syrup
  • 2 Tbsp molasses
  • 1 tsp vanilla extract
  • 1/3 cup chopped dark chocolate (about 2 oz)
  • 1/2 cup chopped marshmallows (or mini marshmallows)


Instructions

  1. Preheat your oven to 350 degrees F. Line an 8x4 inch loaf pan with parchment paper.
  2. In a large mixing bowl, combine the cassava flour, baking soda, cinnamon, nutmeg and salt.
  3. Mix in the almond butter, maple syrup, molasses and vanilla using a spatula. Mix until the dough is well combined.
  4. Fold the dark chocolate and marshmallows into the dough.
  5. Press the dough into the lined loaf pan. Optional: top with additional marshmallows and chocolate.
  6. Place the pan in the oven and bake at 350 degrees for 14 minutes. You want the blondies to be slightly underbaked when you take them out, as they will continue to bake as they cool in the pan.
  7. Remove the blondies from the oven and cool in the pan to room temperature. You can enjoy them warm or chilled, but they tend to cut best after chilling an hour in the fridge.
  8. Store leftovers in a sealed baggie or container in the fridge, up to one week.  For longer storage, place in the freezer up to one month.
